The goal of this task is to define how the persisted data on documents will look like.
* binary data field for the YDoc?
* xml data as blocknote "text" dataset?
This is closely tied to journalizing and collaboration setup

It's possible to always use YDoc as the data source for BlockNote documents, so once we define the data model it should work for both collaborative and non collaborative setups.
