Date Fake-out?

I am new to OpenProject, and am teaching a Project Management course where we are using OpenProject to manage a real project.  There will come a time, after the students have all entered all the work packages for all their projects, when I will want to "fake out" the actual current date so that we can "pretend" that a month of time has passed and they can update their projects.  The course is only 3 months long, but the project they are planning is three years long.  For the last month, I want to move forward in time so that I can give them scenarios in which they have to make adjustments to the original plan and then report on those adjustments.  Does anyone have any idea how can I accomplish this?  I do this when I teach Quickbooks because within the Options there is a place where you can change the current date, and the Quickbooks thinks it's a different date.  I was hoping that I could do something similar with OpenProject, but I don't see a place to set the current date.

Any help would be most appreciated.  Thank you.
