How to design multiple project structure and what is shared between subprojects??

Hello everyone,
I just came across OpenProject and I love the simplicity ans ease to get started, especially when starting from a Docker container !!
Since I’m just getting started, I’m a little bit confused, as to what structure with projects and sub-projects is suitable…
I’m not looking for the ideal solution, since that is definitely depending on the specific situation.
What I’m looking for are may be one or two examples and more importantly, an idea of what information from sub-projects is shared with the parent project and how this can be utilized to improve information sharing between colleagues..
For example how user stories can be integrated in parent sprints, but also maybe, how a Wiki can be used across multiple sub-projects..
In case you are wondering: I’m thinking about using OpenProject for a student team, that will try to build a CUBESat AND a Rocket.
Therefore I think it is a good idea to have a team-wide parent project and at least two sub-projects. But I’m thinking about splitting the work further: for example sub-projects below the rocket project for i.e. electronics, engine, etc…
I’m not sure, if that is too much or useful and not a problem later on…
