In the price list I see that the Cloud Edition offer a Professional support but I can’t see how can I open my ticket or similar.
Can anyone help me to understand?

Hello Paolo,
you can open your ticket in the OpenProject project: https://community.openproject.com/projects/openproject/work_packages/create_new?type=1 (you may need to adjust the type).
Tickets opened by users of the Cloud Edition are given preferential treatment.
