the custom fields shown in the work package view are sorted alphabetically.
You could for instance rename them to “Expected Beginning” and “Expected End” which should lead to the expected order.
Alternatively, you could precede the existing custom fields with a number (e.g. “1. Expected start date”, “2. Expected end date”).
