currently it’s not possible to remove work package default fields.
You can only control whether or not custom fields are displayed on a work package type.
However, on the work package split screen (can be activated in the toolbar on the work package list) only required and very essential elements are shown by default which reduces the complexity (you can still show all attributes by pressing the “Show all” button).
