German and English are part of the OpenProject core.
You can activate German by navigating to “Settings” in the administration area, selecting the “Display” tab and checking “Deutsch” in available languages:
Then you can switch the language in your account setting.
In order to use Italian, you need to install the Translations plugin.
You can either install this plugin yourself in the manual installation or use the packager community edition which includes the plugin.
Then the list of available languages is extended and can choose Italian.
(Please note however that the languages provided by the Translation plugin only provide translations for the OpenProject core. For plugins you use the language will default to English.)

I use only the online demo, so i didn’t have this option to switch the language. But now i know that’s possible, if i install the software.
