Is it possible to create a view showing the "most overdue" work package in every project? Or all the work packages that are delayed by more than a specific amount, e.g. 5 days?
yes, that is possible. To do so, open the global work package view via the bento menu in the upper right [ ⁝⁝⁝ ].[1] Select work packages.
Then, click on Filter and add Finish date as a filter. When you select more than days ago and then the number of days, your work package table should only show work packages that are overdue by a minimum of 5 days. Example ⤵️
Hint: Group this results by project to see which project has the most and longest overdue work packages.

I am easily able to see all task that are late by X days (X >5) grouped by project, but one thing I am missing is the ability to sort by X (the "lateness" of the task). Is there any way to do that?
In more options(Three Dot on right top corner), navigate to sort by and configure "Finish date" Ascending. This will show you Work Package which is most LATE first and so on.
