Hello,
What would be the best way to completely remove openproject ?

That depends on how you installed OpenProject.
Can you tell use the installation method/guide that you have used?

It was on Debian 7 following this steps : https://www.openproject.org/projects/openproject/wiki/Debian_Stable_with_MySQL_in_production
So what I did was to stop the service, disable and remove the site from apache2, remove the lines where I was loading the module passenger_module,delete the public files and finally restart apache.
Actually an easy job. Sorry for the bother.
